How to Make Barley Soup for Diabetics

Barley is a low fat cereal. It is good for diabetic patients. It is however a great source of protein, iron and fiber.

Ingredients for Barley soup

Brown barley – 1 cup
White stock-- 2 cups
Carrot –1 [chopped]
Onion – 1 [chopped]
Fresh mint leaves –1 sp [chopped]
Butter – 1 tbsp
Milk – 1 cup
Salt to taste
Pepper powder to taste
Little fresh parsley

Method of Preparing Barley soup

Cook barley, in white stock for 1  hour on low flame.  Add chopped vegetables and cook for further 20 minutes.
Sieve and reheat in a pan with milk and butter. Add salt and pepper Stir gently and transfer into soup bowls and garnished with chopped parsley leaves.
Serve hot
